Josh Gibbons – Sous Chef
A classically trained, prize-winning French chef, Josh has been working in kitchens since he was 14. He joined Sofitel Gold Coast Broadbeach in 2017, and took over as Chef de Cuisine at Room81 in 2019.
“Inspiration can come from many places, but my greatest source is simply cooking for my wife and kids. I love experimenting with native Australian ingredients – they’re not so well-known or widely used, so they encourage you to discover distinctive new flavours. Creating something original and different from humble ingredients like potatoes, carrots or onions is also a stimulating challenge.
I’m proud of our Chef Hat award and the way we’ve transformed Room81 into a welcoming, brasserie-inspired restaurant, presenting classic French cuisine in an exciting and original way, using fresh, sustainable ingredients.
