Melanie Day – Pastry Chef
Melanie has been working as a pâtissier at 5-star hotels since 2009, after several years as an à la carte chef. She joined Sofitel Gold Coast Broadbeach in 2019, and has regularly been recognised among Australia’s top pastry chefs.
“My first and greatest inspiration was my mum, who is an amazing baker! I inherited her creativity, and I often work with visual artists to create edible sculptures. I aim to bring this inspiration to my kitchen and, through flavour, texture and design, create memorable desserts for my guests that are like works of art in themselves.
Fire is an element I love to use, through burning, torching or smoking – when it’s perfectly executed, with chocolate or caramel for example, it adds a tantalising complexity. I want our guests to share the passion we have for food – dining with us should be an unforgettable experience!” Melanie Day
